Banoffee Pie

For those of you who have never tried a banoffee pie before - you have definitely missed out on something divine!!


I was inspired to make this cake after I had a slice of it during my recet trip to Ireland. Banoffee pie was what we used to have during our afternoons off when I used to go to school in Ireland.


Ingredients
1 packet Digestive biscuits
150g melted butter
3-4 ripe bananas
1 can sweetened condensed milk
500ml cream
3 tblsp vanilla sugar
Chocolate flakes



To make toffee, boil condensed milk in the tin for about 2 - 2.5 hours, make sure the tin is always completely submerged, otherwise it might explode and you will be cleaning the kitchen... Let cool.

Put biscuits in a zip lock bag and crush with a rolling pin. Melt butter and mix with smashed biscuits.
Spoon mixture into a pie dish or spring form pan, spread and chill. While you're chilling the cake, peel and cut bananas lengthwise. Whip cream and add vanilla sugar.

Spread toffee on the biscuit base, top with bananas and whipped cream. Sprinkle he top with some chocolate flakes or grate some chocolate on top. 


You can boil a few tins of condensed milk at the same time, it usually keeps just as long as the use by date of the milk. When you have the toffee at hand this is a super quick dessert, it takes about 20 minutes. (Or you cheat, like I did this time, and use store bought caramel, in Germany Bonne Maman is probably the best).

  5. Nice one Luna, I guess there's nothing wrong with having banoffee pie for brekfast, it's got fruit in it so it must be healthy! I will make one for my parents this weekend!
